Corn and Bacon Casserole.

Ingredients List
- 6 slices bacon, chopped
- 1/2 onion, chopped
- 2 Tablespoons flour
- 2 garlic cloves, minced
- Salt and pepper to taste
- 8 oz sour cream
- 3 1/2 cups corn (fresh or frozen)
Directions
1. Preheat the oven to 375F. Lightly spray a 1 quart baking dish with non-stick spray and set aside.
2. Cook bacon until crisp then drain on a paper towel lined plate.
3. To the bacon drippings, add the onion and cook until softened. Mix in the flour, garlic, salt and pepper and cook for another 1-2 minutes.
4. Remove from heat and stir in the sour cream, then add the corn and half of the chopped bacon and mix everything together.
5. Pour corn mixture into prepared baking dish and top with the remaining bacon. Bake for 20-25 minutes, or until heated through.
