Corn Salsa

 Ingredients List

  • 1 cn (15 1/4 oz.) whole kernel
  • -corn; rinsed and drained
  • 1/2 cn (4.5 oz.) chopped green
  • -chilies; drained
  • 1/2 cn (2.25 oz.) sliced ripe
  • -olives; drained
  • 1 sm Tomato; chopped
  • 2 Jalapeno peppers seeded;
  • -finely chopped
  • 1 1/2 tb White vinegar
  • 2 1/2 tb Oliveor vegetable oil
  • 1/4 ts Salt

 Directions

Combine all ingredients in a nonaluminum bowl. Cover and refrigerate,
stirring often, at least 2 hours. Serve over fish or with tortilla chips.
Makes 3 cups.
