Country Cream Cheese Mashed Potatoes

  • 2 lbs of russet potatoes
  • 3 tablespoons butter
  • ½ half and half
  • 4 oz cream cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper


Peel potatoes and cut into 1 inch chunks. Add to a large pot of boiling water. Add salt and potatoes to water, cover and cook 20 minutes or until potatoes are tender.
Drain potatoes and return to the pot. Add butter, cream cheese, half and half and pepper. Use a hand mixer and mix until smooth.
