Couscous with Mushrooms

 Ingredients List

  • 3 c Defatted chicken or
  • Vegetable stock
  • 2 c Quick-cooking couscous
  • 3 Green onions -- thinly
  • Sliced
  • 4 tb Toasted pine nuts
  • 1/2 c Thinly sliced mushrooms
  • Minced parsley -- for
  • Garnish

 Directions

1. In a large saucepan over medium-high heat, bring stock to a boil. Stir
in couscous, onions, nuts, and mushrooms.

2. Immediately remove from heat, cover, and let stand until liquid is
absorbed (5 minutes). Serve garnished with parsley.
