Cowboy Beans
Ingredients List
- 4 sl Bacon
- 1 c Onion; finely chopped
- 1 c Green bell pepper; finely
- -chopped
- 1 Clove garlic; crushed
- 1 cn Kidney beans(15 oz.);
- -rinsed & drained
- 1 cn Pinto beans(15 oz.); rinsed
- -& drained
- 1 c Prepared barbecue sauce
- 1 tb Brown sugar; firmly packed
Directions
In a large skillet, cook the bacon over low heat until crisp, turning
occasionally. Remove and drain on paper towels.
Discard all but 2 tablespoons of drippings. Add the onion, pepper and
garlic to the skillet; cook over medium heat for 3 to 5 minutes or until
tender.
Stir in the kidney and pinto beans, barbecue sauce and brown sugar; crumble
bacon and return it to skillet. Cover and cook for 5 minutes or until
heated through, stirring occasionally.
