Cranberry Orange Loaf

 Ingredients List

  • 1 c Dried cranberries
  • 510 g French Vanilla Cake Mix; pkg
  • 1 1/4 c Water
  • 1/3 c Vegetable oil
  • 3 Eggs
  • 1 lg Orange
  • 1 c Icing sugar

 Directions

1. In bowl, combine cranberries and 1/4 cup cake mix. Toss well and set
aside.

2. Prepare remaining cake mix according to package directions. Stir in
cranberries. Grate rind from orange into batter. Spoon batter into
greased and floured 9"x5" pan and bake at 350F for 55-60 mins until tester
comes clean. Cranberries may sink slightly. Let cool completely.

3. Squeeze juice from orange and mix enough with icing sugar to make
smooth, pourable glaze. Drizzle over cake.
