Creamy Cauliflower Spinach Pearl Couscous

Ingredients List
- 1½ cups pearl couscous
- 2 cups garlic parmesan cauliflower sauce
- 1 10 oz bag frozen spinach (If you use fresh spinach, roughly chop it)
- ¼ cup parmesan cheese (more to taste)
- Sea Salt & pepper to taste
- ½ lemon, juiced
- 1 tsp garlic powder (more to taste)
- Fresh parsley to garnish
Directions
Prepare garlic parmesan sauce according to instructions.
Cook frozen spinach in a large pan over medium low heat. When fully defrosted, add cauliflower sauce, garlic powder, & mix together. Taste and season with salt and pepper.
As soon as you put the spinach in the pan, start cooking the pearl couscous according to package directions in a separate pan.
When the couscous is done, season with salt and pepper and add ¼ cup parmesan cheese. Pour couscous into the large pan that has the cauliflower sauce in it. Stir until everything is evenly coated with sauce.
Remove from heat, add chopped parsley, and lemon juice. Stir.
Serve hot.
