Creamy Chicken and Mushroom Noodle Casserole

- 3/4 pound Safeway® Penne Rigate
- 1/4 cup Lucerne® Butter (4 tablespoons)
- 1 package sliced mushrooms (8 oz.)
- 2 cloves garlic, minced or pressed
- 1 1/2 pounds Eating Right® Boneless Skinless Chicken Breasts, cut into bite-sized pieces
- Salt and freshly ground pepper
- 1 cup Lucerne® Half and Half
- 1 cup Safeway® Chicken Broth
- 1/2 cup dry white wine (such as Chardonnay or Sauvignon Blanc)
- 1/4 cup Safeway® All-Purpose Flour
- Minced O Organic® Chives (optional)
Directions
1. In a large pot, bring 4 quarts of salted water to a boil over high heat. Add penne and cook until pasta is tender to bite, 10 to 12 minutes. Meanwhile, in a 12-to 14-inch nonstick frying pan, melt 1 tablespoon butter over medium-high heat. Add mushrooms and garlic. Cover and cook, stirring occasionally, until mushrooms exude juices, about 4 minutes. Uncover pan, add chicken pieces and salt and pepper to taste. Cook, stirring often, until mushrooms and chicken are browned and chicken is no longer pink in center (cut to test), about 4 more minutes. Transfer chicken and mushrooms to a plate and keep warm.
2. When pasta is done drain well and then rinse well with cool water; set pasta aside to drain again. In a microwave safe bowl, combine half and half and broth. Cover and microwave on high (100%) until steaming but not boiling, 45 seconds to 1 minute. Stir in wine.
3. Melt remaining butter in the frying pan over medium-high heat. Add flour and whisk to blend completely (mixture will form a paste). Stir often over heat until mixture sizzles but is not browned, about 2 minutes. Add half and half mixture, a small amount at a time, whisking vigorously after each addition to make it smooth. (Mixture will be very thick at first; it”™s O.K. -keep whisking and adding liquid). Cook, simmering and stirring often, until sauce thickens, 3 to 4 minutes. Place pasta in a large serving bowl. Add sauce and chicken mixture. Gently toss to blend then serve immediately.
