Ingredients List
- 12 oz bow tie (farfalle) pasta
- 1/4 cup reserved pasta water
- 1 chicken bouillon cube
- 1 tbs oil
- 16 oz ham steak, cut into cubes
- 1 medium onion, diced
- 1/2 medium green bell pepper , chopped into small cubes
- 2 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried sage
- 1/2 tsp salt or to taste
- 1/4 tsp pepper or to taste
- 1 15 oz can of low sodium yellow corn, drained or 1 1/2 cups frozen corn
- 4 oz cream cheese
- ⅓ c shredded parmesan cheese
Directions
Cook pasta according to package directions and drain, reserving 1/4 cup of the pasta water. Add chicken bouillon to the hot water to dissolve and set aside.
While the pasta is boiling, heat oil in a large sauté pan over medium high heat. Add onion and ham and sauté 3-4 minutes or until the onions begin to soften and ham begins to brown. Reduce heat to medium low and add garlic, thyme, sage, salt and pepper. Cook another 2-3 minutes and then add pasta/bouillon water, corn and cream cheese. Stir until cream cheese has dissolved and corn is heated through. Add Parmesan cheese and stir until melted. Serve immediately.
