Creamy Pineapple Pie

Ingredients List
- Filling
- 1 package (3.4 ounces) instant vanilla pudding mix
- 1¾ cups cold milk 1 can (20 ounces) crushed pineapple, drained
- 1 graham cracker pie crust
- Topping
- 1 cup heavy whipping cream
- 2 tablespoons confectioner's sugar
- 1 teaspoon vanilla
- ¼ cup shredded coconut, toasted
Directions
Filling
In a large bowl, whisk together the vanilla pudding mix and cold milk for about two minutes. Let stand three minutes for mixture to soft-set.
Fold in drained, crushed pineapple.
Pour mixture into graham cracker crust.
Topping
Whisk heavy cream, sugar and vanilla together until stiff peaks form.
Spread mixture on top of pineapple filling.
Sprinkle with toasted coconut.
Refrigerate pie for at least 3 hours (overnight is best) for the flavors to blend well.
