Creamy Vegetable Soup C/p

 Ingredients List

  • 1 lg Onion; chopped
  • 1/4 c Butter
  • 3 md Sweet potatoes; peeled,
  • -chopped
  • 3 md Zucchini; chopped
  • 1 bn Broccoli; chopped
  • 2 qt Chicken stock OR
  • 2 qt Vegetable broth
  • 2 md Red potatoes; shredded
  • 3 Cloves garlic; minced
  • 1 cn Creamed corn OR 3/4 cup
  • -fresh corn kernels
  • 1 ts Celery seed
  • 1 ts Ground cumin
  • 2 ts Salt
  • 1 ts Pepper
  • 2 c Light cream


Place all ingredients in a 4 to 5 quart crockpot except cream. Cook on the
low setting 6 to 8 hours or until sweet potatoes are tender. Ten minutes
before serving, add the cream, if using. Heat through and serve. Formatted

was good with or without the cream. Instead of the spices, I substituted 1
