Ingredients List
- 400 g Tomatoes, canned,
- -chopped.
- 2 Onions,
- -peeled and chopped.
- 1 sm Courgette,
- -sliced.
- 1 Capsicum, green
- -deseeded and sliced.
- 1 Garlic cloves,
- -or two, crushed.
- 1 pn Mixed herbs
- Salt
- Black pepper,
- -freshly ground.
- 1/2 c Cheese, cheddar, low-fat,
- -grated.

- CHO,
- -negligable.
- 280 Kcalories
Directions
Put all the ingredients except the cheese in a saucepan and simmer for 10
minutes, seasoning to taste with salt and freshly ground black pepper.
Fill the pancakes with the ratatouille- putting 2-3 tbs of it in the middle
of each pancake- then roll them up and put them in an ovenproof dish.
Sprinkle the cheese over them and bake for 10 minutes ay 350^F/180^C.
