Crepes - Raratouille Filling [D]

 Ingredients List

  • 400 g Tomatoes, canned,
  • -chopped.
  • 2 Onions,
  • -peeled and chopped.
  • 1 sm Courgette,
  • -sliced.
  • 1 Capsicum, green
  • -deseeded and sliced.
  • 1 Garlic cloves,
  • -or two, crushed.
  • 1 pn Mixed herbs
  • Salt
  • Black pepper,
  • -freshly ground.
  • 1/2 c Cheese, cheddar, low-fat,
  • -grated.
  • ===DIETARY=================
  • CHO,
  • -negligable.
  • 280 Kcalories

 Directions

Put all the ingredients except the cheese in a saucepan and simmer for 10
minutes, seasoning to taste with salt and freshly ground black pepper.

Fill the pancakes with the ratatouille- putting 2-3 tbs of it in the middle
of each pancake- then roll them up and put them in an ovenproof dish.
Sprinkle the cheese over them and bake for 10 minutes ay 350^F/180^C.
