Crispy Rosemary Garlic Potatoes

- 1 1/2 to 2 lbs waxy red or white potatoes, cut into 1/2 to 1-inch cubes or slices
- 1/4 cup olive oil
- 2 tsp chopped fresh rosemary
- 1 tsp minced garlic
- Salt and freshly ground pepper to taste
Directions
Instructions:
1. Place the potatoes in a pot of salted water. Bring to a boil and simmer until nearly tender, about 10 minutes. Drain well.
2. Heat the oil over medium-high heat in a 12-inch nonstick skillet for 3-4 minutes. Add the potatoes and cook, tossing and stirring occasionally (not constantly), until they are nicely browned all over, about 15 minutes.
3. Add the rosemary and garlic and continue to cook for
about 5 more minutes, stirring frequently. Salt generously (and pepper to taste), remove from heat, and serve.
