Cucumber-Carrot Salad
Ingredients List
- 1/4 c Seasoned rice vinegar
- 1 ts Sugar
- 1/2 ts Vegetable oil
- 1/4 ts Grated peeled gingerroot
- 1/8 ts Salt
- 1 c Sliced carrot
- 2 tb Sliced green onions
- 2 tb Finely chopped red bell
- -pepper
- 1/2 Cucumber, (1 cup) halved
- -lengthwise, seeded and
- -sliced
Directions
Combine first 5 ingredients in a medium bowl; stir with a whisk. Add carrot
and remaining ingredients; toss to coat. Cover and chill 30 minutes. Yield:
2 servings (serving size: 1 cup).
