Curried Rice #1

 Ingredients List

  • 2 tb Butter
  • 1/2 c Chopped onion
  • 2 c Chicken broth
  • 1/8 ts Pepper
  • 1 ts Salt
  • 1 ts Curry powder
  • 1 Lemon; juice of
  • 2 tb Parsley flakes
  • 1 ds Paprika
  • 1 c Uncooked rice


Melt butter in 2-quart saucepan; add onion, cooking slowly until tender.
Combine broth, salt, pepper, curry powder, lemon juice and parsley; add to
onion and bring to a boil. Add rice, cover and cook over low heat for 20
minutes. Remove from heat, set aside for 10 minutes. Garnish with paprika.
