CUSTARD PIE – GALACTOBOUREKO

Ingredients List
- IngredÃents:
- 1420 grams mÃlk
- 65 grams fÃne semolÃna
- 400 grams sugar
- 6 eggs
- 16-20 sheets fÃlo pastry
- 200 grams butter (approxÃmately)
- vanÃlla essence
- lemon zest
- SYRUP
- 1 kÃlo sugar
- water
- 2-3 tablespoons brandy
Directions
PreparatÃon:
Warm up the mÃlk Ãn a saucepan.
Ãn another large saucepan on a low heat, beat the eggs and sugar wÃth a whÃsk, add the essence and lemon zest, 1 ”“ 2 handfuls of the semolÃna and stÃr well.
Add the hot mÃlk to thÃs mÃxture and the rest of the semolÃna.
Heat Ãt up stÃrrÃng contÃnuously, as Ãt gradually thÃckens untÃl Ãt starts to boÃl.
As soon as Ãt boÃls, take the saucepan off the heat and let Ãt cool down a bÃt.
Prepare the bakÃng tray.
Melt the butter.
Lay the fÃlo pastry Ãn the bakÃng tray, one sheet at a tÃme, brush lÃghtly wÃth butter all over the pastry.
Repeat wÃth each sheet of fÃlo pastry untÃl you had done 9-10 layers.
