Dole Honey Mustard Chicken

 Ingredients List

  • 1 cn (20 oz) dole pineapple
  • sl In juice
  • 4 Chicken breasts
  • 2 ts Oil
  • 2 lg Pressed garlic cloves
  • 1 ts Crumbled thyme
  • 1 tb Cornstarch
  • 1/4 c Honey
  • 1/4 c Dijon mustard


Drain pineapple; reserve juice. Sprinkle chicken with salt & pepper to
taste. Rub with garlic & thyme. Brown in hot oil in nonstick skillet.
Combine 2 Tbls. reserved juice with starch. Combine honey & mustard;
stir into skillet with remaining juice. Spoon sauce over chicken.
Cover & simmer 15 minutes. Stir starch mix into pan juices. Add
pineapple. Cook, stirring, until sauce boils & thickens.
