Ingredients List
- 1¼ cup warm water
- 2 Tbsp. Truvia or ¼ cup sugar
- 2 Tbsp. instant yeast
- â…“ cup oil (I used coconut oil)
- 1 tsp. salt
- 1 egg
- 3½ cups flour
- 6 Tbsp. unsalted butter, softened
- 3 Tbsp. Truvia or about â…“ cup sugar
- zest from one large orange (about 1 Tbsp)
- 1 Tbsp. unsalted butter, softened
- ½ cup powdered sugar
- 2 tsp. milk
- zest of 1 lemon
- 1 tsp. lemon juice
Directions
1. Spray a muffin tin with cooking spray and set aside.
2. In a large mixing bowl, combine warm water and sugar and yeast. Add in oil, salt, egg and flour and stir until dough forms.
3. On a floured surface, roll dough out into a rectangle. In a small bowl, combine 6 Tbsp. butter, 3 Tbsp. Truvia or sugar, and zest from an orange. Spread evenly over rolled out dough. Roll into one long roll. Cut into about 1 to 1½ inch sections (you should get 12-14 rolls from this) Place each roll into the prepared muffin tin. Let rise for 15 minutes.
4. Preheat oven to 375º F. In a small bowl, combine 1 Tbsp. butter, powdered sugar, milk, lemon zest and juice.
5. Place rolls in the oven and bake for about 15 minutes, until lightly golden. Drizzle with lemon glaze and ENJOY!
