Easy Apple Blondies

Ingredients List
- 2 cup apples, chopped peeled
- ½ cup chopped pecans
- ½ cup butter, melted and cooled
- ½ cup brown sugar
- ½ cup granulated sugar
- 2 eggs
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Pinch of salt
- 1 ½ cup all-purpose flour
- For topping:
- 2 tablespoon granulated sugar
- 1 tablespoon cinnamon
- Caramel topping if desired
Directions
Preheat oven to 350 degrees F
Line a 9x13 inch baking pan with parchment paper and spray with cooking spray, set aside
In a large bowl, mix together butter, brown sugar and granulated sugar until blended
Add eggs, vanilla extract, cinnamon, baking powder and salt, mix well
Add flour and mix until combined
The batter will be thick
Add apples and pecans and mix well
Pour mixture evenly into prepared pan
In a small dish mix sugar and cinnamon and sprinkle on top of apple mixture
Bake 25-30 minutes or until golden brown and the toothpick inserted comes out clean
Remove from oven
Allow to cool
Cut into bars and serve
Top with caramel topping if you desired
