Easy Cheesy Chicken Enchiladas

Ingredients List
- 1 lb Chicken
- Jar of your favorite Salsa (we use Pace, mainly becuase it's cheap)
- 2 cans Old El Paso Enchilada Sauce (we like Medium)
- 3 cups Mexican Style shredded cheese
- 8 -10 Tortillas
Directions
1.) Put chicken in crockpot and pour salsa over chicken. Cover and cook on high for 6 hours (or low...depending on your time and preference)
2.) Shred chicken and put into bowl. Add 1 can on enchilada sauce and 2 cups cheese. Blend together.
3.) Preheat oven to 375 and grease 13x9 baking pan
4.) Spoon mixture into tortilla and roll up and place face down in pan. You should be able to get 8 full enchiladas...sometimes I get 10 if I squeeze.
5.) Cover with second can of enchilada sauce and top with 1 cup shredded cheese.
6.) Bake in oven 15 - 20 minutes.
