Easy Chocolate Paninis

Ingredients List
- 8 1/2-inch thick slices from 1 loaf challah, brioche, white or Italian bread
- 3-4 tablespoons salted butter, softened*
- 4 ounces (2/3 cup) semisweet chocolate chips or finely chopped chocolate, best quality such as Ghirardelli or Guittard
Directions
Adjust an oven rack to the middle position and preheat oven to 425 degrees. Line a baking sheet with parchment paper for easy cleanup. Spread one side of each bread slice with about 1½ teaspoons butter and place 4 slices, buttered side down, on the prepared baking sheet. Spread about a quarter of the chocolate chips evenly on each of the 4 slices, leaving a ¼-inch border around the edges. Cover with the remaining bread slices, buttered side up.
Bake until the bottoms of the paninis are crisp and golden brown, 7-9 minutes. Remove the pan from the oven. Using a metal spatula, gently press down on sandwiches to spread the soft chips into melted chocolate. Carefully turn the sandwiches over and continue baking until the bottoms are crisp and golden, about 5 minutes longer. (Keep a close eye on it; the sandwiches go from golden brown to burnt quickly!) Let cool slightly, cut paninis in half and serve.
