Easy Greek Salad with Homemade Dressing

 Ingredients List

  • ½ head romaine lettuce, chopped
  • ½ of a large tomato, diced
  • ½ cucumber, diced
  • 2 green onions, sliced
  • ½ cup pitted kalamata olives, sliced
  • ¼ cup crumbled low-fat feta cheese
  • ¼ cup olive oil
  • 2¼ tsp. red wine vinegar
  • 2½ tsp. parmesan cheese, grated
  • 1½ tsp. lemon juice
  • 1½ tsp. garlic, finely diced or put through a press
  • 1½ tsp. dried oregano
  • ¼ tsp. dried basil
  • ¼ tsp. salt, or more for taste
  • ¼ tsp. pepper, or more for taste

 Directions

1. Combine lettuce, tomato, cucumber, green onions and olives in a large bowl.

2. In a mason jar, combine olive oil, vinegar, parmesan cheese, lemon juice, garlic, oregano, basil, salt and pepper. Place lid on jar and shake until combined.

3. When ready to serve/eat salad, pour dressing over lettuce mixture and toss with feta cheese. Enjoy!
