Easy Holiday Fruit Cake

 Ingredients List

  • 1 pk 1 lb 3 oz white cake mix
  • 1 Egg
  • 1/4 c Water
  • 1 ts Salt
  • 1 ts Lemon extract
  • 3 Eggs
  • 1/2 c Sifted all purpose flour
  • 1 lb Light raisins
  • 1 lb Whole pecans
  • 1/2 lb Whole candied cherries
  • 1/2 lb Candied pineapple, cut
  • -into strips.

 Directions

Line two greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans with waxed paper;
grease paper.

Combine cake mix, egg, water, salt and lemon extract in large bowl of
electric mixer. Beat two minutes at medium speed. Add 3 eggs; b eat w
minutes longer.

Mix flour and remaining ingredients; stir into cake batter.

Pour into the two prepared pans.

Bake at 275 degrees for about two hours.
