Easy Mexican Pan Bread

Ingredients List
- ½ cup dry beans, cooked with extra water ( a dark bean such as kidney or black bean makes the dish colorful)
- ¾ cup stock from beans
- 1 onion, chopped
- 1 clove garlic, minced
- 1 egg, beaten
- 2 teaspoons baking powder (optional)
- 1 cup cornmeal
- 1 tablespoon chili powder, or more to taste
- ½ teaspoon salt
- â…“ cup grated cheese
- ¼ cup sliced black olives
Directions
Sautée onion and garlic in a small heavy skillet.
In separate bowl mix together all remaining ingredients except for the cheese and olives. Pour this mixture into the skillet and stir to mix well.
Sprinkle grated cheese and olives on top and bake at 350°F for about 15 minutes.
