Easy Peasy Organic Veggie Soup

Ingredients List
- 1/2 cup organic onion
- 3 organic garlic cloves, minced
- 2 tablespoons organic olive oil
- 2 cups organic chicken broth
- 28 oz diced organic tomatoes with their juices
- 8 oz organic tomato sauce
- 2 large organic carrots, peeled and sliced
- 1 cup organic corn (frozen corn is fine)
- 1/2 cup organic green beans (frozen beans are fine)
- 1/2 cup organic peas (frozen peas are fine)
- 1 large organic potato, diced into bite-sized pieces
- 1 small organic zucchini, sliced into halves
- 1 teaspoon organic dried basil (or a tablespoon of fresh)
- 1 teaspoon organic dried oregano (or a tablespoon of fresh)
- 1 teaspoon organic dried parsley (or a tablespoon of fresh)
- 1/4 teaspoon ground black pepper
- 1/4 cup fresh organic parmesan cheese, grated
Directions
1. Heat olive oil in a large pot and sauté onion until just tender, about 2 to 3 minutes. Add garlic and sauté until fragrant, about 30 seconds.
2. Add all other ingredients except for potato and zucchini. If using fresh herbs, stir them in right before serving.
3. Bring soup to a boil, turn heat down to low and simmer covered for 30 minutes or until veggies are just tender. Stir occasionally.
4. Add potato and zucchini, simmer covered for another 20 to 30 minutes or until just tender.
5. Top individual bowls of soup with fresh parmesan cheese.
