Easy Sugar Cookies

Ingredients List
- Ӣ 1 1/2 cups butter, softened
- Ӣ 1/2 zest of one lemon
- Ӣ 1 cup confectioner's sugar
- Ӣ 1 cup granulated sugar
- Ӣ 4 eggs
- Ӣ 2 teaspoon pure vanilla extract
- Ӣ 5 cups all-purpose flour
- Ӣ 2 teaspoons baking powder
- Ӣ 1 teaspoon salt
- Ӣ Optional: powder sugar, icing or vanilla buttercream frosting for decoration (see below)
Directions
1) In a large bowl, cream together butter, lemon zest and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
2) Preheat oven to 400 degrees F (200 degrees C).
3) On a lightly floured work surface roll out dough to 1/4 - 1/2 inch thick. Cut into desired shapes with any cookie cutter and transfer to prepared baking sheets, leaving an inch in between. Leftover dough can be rolled and cut once more.
4) Bake in a 350 degree preheated until lightly golden, about 6-8 minutes; do not allow to brown. Transfer to wire racks to cool.
5) Decorate with icing or vanilla butter-cream frosting (see recipe below)
Vanilla Buttercream Frosting:
Ӣ 3 cups confectioners' sugar
Ӣ 1 cup butter
Ӣ 1 teaspoon vanilla extract
Ӣ 1 to 2 tablespoons whipping cream
Vanilla Buttercream Frosting Directions:
1) In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.
2) Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.
3) Use to decorate as desired
