Egerdouce Sauce

 Ingredients List

  • 2 tb Olive oil
  • 3 oz Onions, roughly chopped
  • 1 oz Each of raisins & currants
  • 1/2 ts Each salt, gournd ginger,
  • Mace & saffron
  • 1/4 ts Ground cloves
  • 1/2 c Dry white wine
  • 1/3 c Wine vinegar
  • 1 oz Sugar
  • 3 oz Wholemeal or wholewheat
  • Breadcrumbs
  • 1/3 c Water

 Directions

Gently cook the onions in the oil till they are solft. Add the fruit &
spices & cook for a few minutes. Melt the sugar in the wine & venegar
& add this to the onion & fruits. Simmer all toghether, covered for
15 minutes then process. Reutrn the mixture tothe pan & add the
breadcrumbs & enough water to make a thick but not claggy sauce.
Adjust the seasoning to taste & serve with the roast meat.
