Egerdouce Sauce
Ingredients List
- 2 tb Olive oil
- 3 oz Onions, roughly chopped
- 1 oz Each of raisins & currants
- 1/2 ts Each salt, gournd ginger,
- Mace & saffron
- 1/4 ts Ground cloves
- 1/2 c Dry white wine
- 1/3 c Wine vinegar
- 1 oz Sugar
- 3 oz Wholemeal or wholewheat
- Breadcrumbs
- 1/3 c Water
Directions
Gently cook the onions in the oil till they are solft. Add the fruit &
spices & cook for a few minutes. Melt the sugar in the wine & venegar
& add this to the onion & fruits. Simmer all toghether, covered for
15 minutes then process. Reutrn the mixture tothe pan & add the
breadcrumbs & enough water to make a thick but not claggy sauce.
Adjust the seasoning to taste & serve with the roast meat.
