Eggplant Acapulco

 Ingredients List

  • 1 lg Eggplant
  • 1/2 c Bread crumbs
  • 1/2 c Grated Parmesan cheese
  • 1/4 c Butter
  • Salt and pepper to taste
  • 1/2 lb Mushrooms; sliced
  • 2 cn (8-oz) tomato sauce

 Directions

Peel eggplant and cook until tender; cut into pieces or mash. Layer
ingredients in 1-1/2 qt baking dish. Bake uncovered at 350 for 30 minutes.
