Eggplant Bruschetta Au Gratin

 Ingredients List

  • 1 Eggplant with peel
  • 1 c Tomato sauce
  • 1 c Grated mozzarella cheese
  • 1 tb Marjoran
  • 4 Slices of whole wheat bread

 Directions

Cut the eggplant in round slices. Fry the slices in a pan with a little
oil. Toast the bread. Spread the tomato sauce over the toast. Place the
eggplant slices on top. Sprinkle grated mozzarella cheese. Sprinkle a
little of marjoran. Place in oven under the broiler for 2 - 3 minutes or
until the cheese browns.
