Eggplant with Tomatoes

  • 2 Thin slices Eggplant (50gm)
  • 2 ts Butter (10gm)
  • 1/4 c Canned tomatoes (50 gm)
  • 1/2 ts Chives, chopped (2gm)
  • Salt and pepper to taste


Brown the eggplant in butter. Add salt and pepper. Heat tomatoes in
a separate pan and pour over eggplant. Sprinkle with chopped chives.
