Evaporated Mashed Potato Casserole

Ingredients List
- 8 medium potatoes (approx 2lbs, peeled and cubed)
- 1 cup evaporated milk
- 1/4 Parmesan cheese
- 2 cups shredded cheddar cheese, divided
- 1/2 cup sour cream
- 4-6 slices of bacon, cooked and crumbled ( or about 1/2 cup of bacon bits will work too)
- salt/pepper, to taste preference
- 1/2 tsp garlic powder
Directions
Preheat oven to 350 degrees. Spray/grease a 8-9in baking dish.
Boil potatoes in large pot until tender. About 20-30 minutes. Drain well.
Return potatoes to pot. Add milk, sour cream, salt, pepper, and garlic powder. Beat/mash well until smooth and creamy.
Fold in 1 cup of cheddar cheese.
Spread evenly into prepared dish and bake for 20 minutes.
Remove from oven. Top with bacon and remaining 1 cup of cheddar cheese.
Return to oven and bake until cheese is melted.
