Everything Blondie Bars

 Ingredients List

  • 1 cup butter, room temperature
  • 2 cups light brown sugar, packed
  • 2 eggs, room temperature
  • 1 tablespoon vanilla extract
  • 2-2/3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 cups of mix-in's (I used 1/2 cup peanut butter M&M's, 1/2 cup Mallow Bits and 12 Nutter Butter cookies broken into pieces)

 Directions

1 Preheat oven to 350-degrees. Line a 9x13-inch baking dish with parchment paper or foil and spray with baking spray. Set aside.

2 In the bowl of a stand mixer, affixed with the paddle attachment, add the butter and beat on medium-high speed until light and creamy. Add the brown sugar to the butter and beat for 1-2 minutes or until light and fluffy. Scrape down the sides of the bowl as needed. Add eggs one at a time to the sugar mixture, beating the egg in completely before adding the second one. Add the vanilla extract and mix until incorporated. Turn the mixer to low speed and slowly add the flour and baking powder until barely combined. Do not overmix.

3 Remove bowl from mixer and fold in your mix-in's by hand. Pour batter (it will be thick like cookie dough) out into prepared pan and press evenly into the pan.

4 Bake in 350-degree oven for 30-minutes. Remove from oven and let set completely before cutting into desired sized bars.
