Fiesta Rice

 Ingredients List

  • 2 1/2 c Cooked brown rice
  • 3/4 c Low-fat cottage cheese
  • 1 c Grated reduced-fat cheddar
  • -cheese
  • 1 2 ounces jar pimentos;
  • -drained and chopped
  • 1/2 c Skim; or 1% milk
  • 1 lg Tomato; peeled and diced
  • 1 ds Paprika
  • Nonstick vegetable cooking
  • -spray

 Directions

Preheat oven to 350 degrees.

Combine 1/2 cup of cheddar cheese and all other ingredients except paprika.
Stir until well mixed.

Spray casserole with vegetable spray.

Pour in mixture; top with remaining cheddar cheese and sprinkle well with
paprika.

Bake 25 to 30 minutes.
