Fig Jam with Honey

 Ingredients List

  • 1 cup honey equals 1 cup sugar. Peel figs, measure and add 3/4 cup honey
  • for each cup fruit and let cook slowly, stirring constantly. When thick,
  • pour into jars to within 1/4 inch of top. Put on cap, screw band firmly
  • tight. Process in boiling water bath 10 minutes. A little sliced lemon or
  • chopped walnuts in fig jam makes it delicious.

Recipe via Meal-Master (tm) v8.05

Title: Fig Muffins
Categories: Bread
Yield: 12 Servings

WET MIX
1/2 c Oil
1/2 c Sugar
2 Eggs
1/2 c Milk
1/2 Orange; juice of (see note)
2 ts Orange rind
1 c Chopped dried figs

DRY MIX
2 1/2 c Self-raising flour
1/4 ts Baking soda

Preheat oven to 400øF, grease pans. Thoroughly blend all the wet mix
ingredients lastly adding the figs, gently fold the dry mix into the wet
mix. Place in pans and bake for 20-25 mins. Makes 10-12.

Variation: Fig & Ginger - Add 1/2 cup of chopped preserved ginger to the
wet mix.

NOTE: I'm not sure if the orange juice is supposed to be the juice of 1/2
an orange or whether there was a misprint and it should have been 1/2 cup
orange juice, try the smallest amount and then add more if too dry.
