Fire and Ice Tomatoes

 Ingredients List

  • 5 lg Ripe tomatoes; peeled and
  • -quartered
  • 1 md Green pepper; cut in strips
  • 1 md Onion; thinly sliced
  • 3/4 c Cider vinegar
  • 4 1/2 tb Sugar
  • 1 1/2 ts Celery seed
  • 1 1/2 ts Mustard seed
  • 1/2 ts Salt
  • 1 md Cucumber; peeled and sliced
  • -thin

 Directions

Combine tomatoes, green pepper and onion rungs in medium bowl. In small
saucepan, combine remaining ingredients except cucumber slices; bring to
boil 1 minute. pour hot mixture over vegetables in bowl; let stand at room
temperature until cool. Add cucumbers. Refrigerate several hours, stirring
once or twice, until well. Drain before serving. Serves; 6- 8

Tootie Notes: Serve as a salad or as a relish dish...good accompaniment for
barbecued meat or poultry. Wonderful with ham.
