Fish in Newspaper

Ingredients List
- 6 sheets newspaper
- 1.5 - 2 kg whole fresh linefish
- 1 red pepper cut into strips
- 30 ml oil
- 1 packet ROYCO Spicy Tomato and Onion Packet Soup
- 60 ml "fresh mixed herbs (parsley, thyme, fennel)" chopped (OR 20 ml mixed dried herbs)
- 1 packet spring onions chopped
- 3 ml ground fennel seeds
- 50 ml lemon juice
- 60 cm string
Directions
1.Open the newspaper sheets and place the fish in the centre.
2.Fry the peppers in 15 ml oil.
3.Brush the fish, inside and out, with the remaining oil, then sprinkle with the contents of the packet of ROYCO packet soup.
4.Place ½ the peppers, herbs, spring onions, ground fennel seeds and lemon juice into the cavity of the fish. Sprinkle the other ½ on top and underneath the fish.
5.Wrap the fish up in the newspaper and secure with string.
6.Wet the paper very well under running water then braai over medium coals for 20-25 minutes per side.
Tip: Yellowtail works particularly well on this recipe.
