Flounder Skillet

 Ingredients List

  • 1/2 c 100% corn oil margarine
  • 1 tb Dill weed
  • 2 c Thinly sliced potatoes
  • 1 c Sliced onion
  • 1 pk (9oz) green beans
  • 1 lb Flounder fillets
  • 1/2 c Water
  • 1/4 c Lemon juice
  • 3/4 ts Salt
  • White pepper
  • Lemon slices (for garnish)


Melt all margarine except 1 Tbls. in skillet; stir in dill weed. Layer
potatoes, onions & green beans in skillet; top with flounder.
Sprinkle top with water, lemon juice, salt & white pepper; dot with
remaining margarine. Cover, reduce heat & simmer until potatoes are
done about 20 minutes. (Do not overcook.) Garnish with lemon slices.
