Fortune Cookies Recipe

Ingredients List
- 8 tablespoons all purpose flour
- 1 ½ teaspoon cornstarch
- 8 tablespoons sugar
- 1 tablespoon water
- 2 large egg whites, let them sit at room temperature for 30 minutes
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract
- 3 tablespoons vegetable oil
Directions
Measure strips for fortunes on piece of paper. Strips should be about 3inches long and ½ inch wide. Write fortunes then cut the strips. Set aside.
Preheat the oven to 300°F. Grease baking sheets.
In medium size bowl, combine flour, cornstarch, and sugar. Stir in water; mix until batter is moistened. (It should look lumpy!) Set aside.
Using a mixer, beat egg whites until foamy but not stiff. (Foamy egg whites will look white, creamy and have lots of bubbles.) Add vanilla extract, almond extract, and oil; beat until combined, about 30 seconds.
Add flour-mixture into egg-mixture; stir until batter is smooth.
Place 5 tablespoons of batter onto cookie sheet, spacing 2 or 3 inches apart. Tilt baking sheet back and forth, side to side, until each tablespoon of batter forms into a 4-inch circle.
Bake cookies one sheet at a time for about 15 minutes or until outer rim turns golden brown color (center will remain pale), and they are easy to remove from the baking sheet.
Remove cookies with spatula onto wooden board. Quickly place fortune in middle of each cookie. To form fortune cookie shape: fold cookie in half; then gently pull edges downward over the rim of a glass.
Place finished cookie in the cup of a muffin tin so that it keeps its shape. Continue with the rest of the cookies.
