french toast muffins
Ingredients List
- 6 slices 100% whole wheat bread
- 2 large eggs
- 2 egg whites
- ¼ cup milk
- ½ teaspoon 100% pure vanilla extract
- dash nutmeg
- ¼ teaspoon cinnamon
Directions
Heat oven to 350 °
Spray nonstick 12-cup muffin tin lightly with cooking spray
Cube bread and place in medium bowl
In a bowl or glass measuring cup add eggs, egg whites, milk, vanilla, nutmeg and cinnamon; stir well
Pour egg mixture over cubed bread and mix well. *note egg mixture will be distributed fully into the cubed bread
Place about ¼ cup bread into each muffin cup
Bake 18-20 minutes
Top with syrup, fresh fruit or a fruit sauce
