Fresh Basil Tomato Bisque

Ingredients List
- 7 to 8 ripe tomatoes
- 1 ½ tbsp. butter
- 1 large onion sliced
- 1 tbsp brown sugar
- 2 bay leaves
- 2 tbsp fresh basil
- 1 cup milk
- 1 pint cream
- 1 tbsp chives chopped
- 1 tsp dry oregano
Directions
Remove the skin and the seeds from the tomatoes.
In a saucepan, heat the butter over medium high heat.
Add the onion, and the tomatoes and sauté.
Add the brown sugar, bay leaves, basil and season with salt and pepper.
Bring to a boil and reduce to a simmer. Cook for about 25 minutes stirring occasionally.
Remove from the stove and transfer to a blender. Blend into puree.
Bring back to a saucepan. Stir in the milk and the cream.
Cook for about 3 minutes and serve.
