Frijoles

 Ingredients List

  • 1 lb Beans
  • Water
  • 1 c Onion -- chopped
  • Salt
  • 1 Garlic -- clove

 Directions

Soak beans overnight or by quick-soak method. Discard soak water. Cover
beans with water, add onion and garlic. Bring to boil and simmer until
tender, about 2 hours. Keep barely covered with water. Season to taste with
salt after cooking. Use for Frijoles Refritos or serve as side dish,
garnished with grated cheese, chopped green onion, and/or chopped cilantro.
