Fudgy Banana Blondies

 Ingredients List

  • 2 large bananas
  • 1 3/4 cups rolled oats
  • 3/4 cup powdered peanut butter
  • 1 teaspoon baking powder
  • 1/4 cup honey
  • 1/4 cup sweetener/sugar of choice
  • Pinch salt
  • 1 teaspoon vanilla extract
  • 1/2 cup low fat vanilla greek yoghurt
  • 1/4 cup dark/semi sweet semi sweet/dark


Preheat oven 200C | 390F. Spray a 8x8 inch baking pan with cooking spray, wipe over with a paper towel and set aside.
Throw ALL ingredients (except chocolate chips) into a food processor and blend until smooth.
Fold half the chocolate chips into the batter and pour into the prepared pan. Sprinkle remaining chocolate chips on top of bars.
Bake for approx 20 minutes (depending on your oven) until a toothpick inserted into the centre comes out clean.
Once cooled, gently cut into 16 bars.
