Category: Rice, Sauces, Dinner Party, Main Dish, Chicken

 Ingredients List

  • -2 bell peppers-chopped ( I prefer green ones b/c they contrast nicely with the reddish sauce :)
  • -green onions-chopped
  • -3-4 cloves of garlic-thinly sliced
  • -3 chicken breasts-cut into bite sized pieces
  • -corn starch
  • -veggie oil
  • -1 Tbsp. sriracha hot chili sauce- (the bottle has a rooster on it) and 1 Tbsp is just a starting point so feel free to add however much your tastebuds desire!
  • -12 0z. Maesri or Mae Ploy sweet chili sauce ( i've tried other brands and these are the best)

 Directions

1. Dredge the bite-size chicken pieces in cornstarch-I typically put them in a tupperware container and shake them all around

2. Cover bottom of saucepan with oil and fry chicken until inside is cooked through.-You'll have to do this in batches. Drain on paper towels

3. In a separate large saucepan saute the peppers and garlic in just a little bit of olive oil

4. add in the chicken, sriracha, and about 1/3-1/2 of the sweet chili sauce....this just depends on personal preference. I typically do about 1/3 a bottle because I don't like a lot of sauce, and Jonathan tends to add more to his :)

5. When everything is heated through stir in the green onions and serve over rice

6. Enjoy!
