German Chocolate Mug Cake

Ingredients List
- Cake Ingredients:
- 1 tablespoon unsweetened cocoa powder (10 calories)
- 1/4 cup all purpose flour (100 calories)
- 1/8 teaspoon salt
- 1 1/2 teaspoons Truvia
- 1/2 teaspoon baking powder (1 calorie)
- 1 tablespoon I Can’t Believe It’s Not Butter, “Lite” (40 calories)
- 1 tablespoon Joseph’s Maltitol Sweetener, or substitute with additional butter (8 calories)
- 2 tablespoons unsweetened coconut milk (6 calories, or more to thin if desired)
- 1/2 teaspoon pure vanilla extract (6 calories)
- Optional: Chocolate Chips
- Topping Ingredients:
- 1 1/2 Tablespoons unsweetened shredded coconut (50 calories)
- 1/2 tablespoon unsweetened coconut milk or skim milk, if needed (3 - 5 calories)
- 1/2 tablespoon I Can’t Believe It’s Not Butter, “Lite” (20 calories)
- 1 tablespoon Truvia Brown Sugar Blend (26 calories)
Directions
Combine all ingredients for mug cake together and stir carefully (until thoroughly mixed).
Bake in the microwave for 1 minute to 1 minute and 30 seconds, or until baked through.
Remove from the microwave, set aside and allow to cool while you make the topping.
Using a small, microwavable-safe bowl, combine all ingredients for the topping.
Cook in the microwave at 20-second intervals, stirring after each session, until slightly thickened.
Once done, remove and allow to cool for one minute. Top cake with "frosting" and enjoy.
