German Chocolate Pecan Pie

Ingredients List
- PAM Cooking Spray
- Pie crust (make your own or buy one like I did)
- 5 tablespoons unsalted butter
- 2 large eggs, whisked together and set aside
- 1/2 cup dark brown sugar
- 1/3 cup light corn syrup
- 1 1/2 cups pecan halves, coarsely chopped
- 3/4 cup shredded coconut
- 1 1/2 cups semi-sweet chocolate chips
Directions
Preheat oven to 375*F. Spray pie pan with PAM Cooking Spray. Unroll your pie crust and press it into the pan. Pierce a few times with a fork.
Bake for 5 minutes. Remove from oven and cover pie crust with chocolate chips. It”™s okay if they start to melt! Mmmmm!
Note: I didn”™t realize that my pie crust was too small for my huge pie pan. Make sure yours match or you won”™t have much of a crust. ;)
In a saucepan, whisk together butter, brown sugar, and corn syrup over medium heat until melted. In a medium bowl, whisk together sugar mixture and beaten eggs.
Stir in coconut and coarsely chopped pecans. PAM Smart Tip: Spray your food processor with Pam when chopping nuts to make clean up a breeze!
Pour in the filling and bake for about 20 minutes. Let the pie cool completely before slicing.
This is a pretty sticky pie ”“ between the corn syrup, brown sugar, and sweetened coconut flakes, it”™s one that you”™ll only need a small slice of to satisfy your sweet tooth. Thanks to PAM Cooking Spray, though, you don”™t have to worry about even one morsel of this delicious pie sticking to the pan!
