Gingerbread Protein Muffins

Ingredients List
- 1 cup egg whites
- 1 egg
- 1 1/2 cup old-fashioned rolled oats
- 1/4 cup baking stevia or several packets stevia (optional)
- 1/2 cup plain nonfat Greek yogurt
- 1 scoop vanilla protein powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground ginger
- 1 teaspoon cinnamon or pumpkin pie spice
- 1 teaspoon vanilla extract
- 1 tablespoon molasses
- 1/4 cup mini chocolate chips (optional for additional sweetness)
Directions
Blend all ingredients except the chocolate chips (if using) in the blender and pour into well greased muffin tins. If desired, stir in mini chocolate chips. Bake at 350 degrees for approx 15-20 minutes.
