Glazed Carrots

 Ingredients List

  • 2 c Sliced Carrots
  • 3/4 c Apple Juice
  • 1/4 ts Salt, Optional
  • 1/2 ts Unsalted Butter, Or
  • -Margarine
  • 1 ts Orange Zest
  • 1 ts Lemon Zest
  • 1 tb Honey


In a saucepan over medium heat, combine carrots and apple juice. Cover and
simmer until carrots are tender, about 10 minutes. If liquid evaporates,
add a small amount of water. Uncover pan and add remaining ingredients.
Simmer uncovered until liquid is thick and syrupy, about 3 - 5 minutes.
Serve hot.

Serves 3 - 4 VEGAN (except for the HONEY)

This is very good.
