Glazed Carrots with Thyme

Ingredients List
- 1 1/4 cups water
- 3 tablespoons honey
- 3 tablespoons brown sugar
- 1/4 cup butter
- 2 pounds baby carrots
- 1 tablespoon fresh thyme leaves, chopped
- Kosher salt
- Fresh cracked black pepper
Directions
In a large skillet bring water, honey, brown sugar, and butter to a boil. Add carrots and reduce heat to medium. Partially cover and simmer until the carrots soften - about 10 minutes.
Uncover and continue cooking, gently tossing often until carrots are tender and glazed - about 8 minutes. Stir in thyme and cook for another minute.
Season with salt and pepper to taste.
