Gluten Free Chocolate Crinkle Cookies

Ingredients List
- 1 stick unsalted butter, room temperature
- 1 cup sugar
- 2 whole eggs
- 1 tsp vanilla
- 1/2 cup cocoa powder
- 2 cups superfine almond flour
- 1/4 cup coconut flour
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/4 cup powdered sugar
Directions
Preheat the oven to 350 degrees. Using a stand mixer, combine the butter and sugar until well mixed. Add eggs, one at a time and mix well after each addition. Add vanilla.
Next add in the almond flour, coconut flour, cocoa powder, baking soda and salt. Stir until mixed.
Roll them into 1 inch balls and roll in powdered sugar. Place on a parchment-lined baking sheet. Use a glass with a flat bottom to gently flatten them out.
Cook for 8-10 minutes. Do not overcook. They will continue to cook when removed from the oven.
Next add in the almond flour, coconut flour, cocoa powder, baking soda and salt. Stir until mixed.
