Good Morning Coffee Cake (Motts)

Ingredients List
- 1 1/2 c Buttermilk baking mix
- 1/2 c Quick-cooking oats
- 1 1/2 c Unsweetened Apple Sauce;
- -divided
- 1/3 c Sugar
- 1/2 ts Cinnamon
- 1 Egg
- 1 ts Vanilla
- 2 tb Margarine or butter;
- -softened
Directions
TOPPING
1/3 c Coconut OR 1/3 cup chopped
-nuts
1/3 c Quick-cooking oats
2 tb Brown sugar
1/4 ts Cinnamon
2 tb Margarine; softened
CAKE: Heat oven to 350F. Grease 8-inch round pan.
In large bowl, combine baking mix, oats, 3/4 cup apple sauce, sugar,
cinnamon, egg, vanilla and margarine. Stir vigorously for 1 minute; spread
into prepared pan. Bake at 350F for 30 to 35 minutes or until toothpick
inserted in center comes out clean.
Immediately spread with remaining apple sauce; sprinkle with Topping.
Broil, 5 inches from heat source, 3 minutes or until golden. Serve warm or
cool.
*TOPPING: Combine coconut, oats, brown sugar, cinnamon and softened
margarine.
Notes: Pantry: Mott's Natural Apple Sauce. This coffee cake is a favorite
for brunches and coffee parties.
